Homemade Pickle Relish

Makes 1-1/2 cups

  • 2 cups finely chopped cucumber
  • 1/2 cup finely chopped onion
  • salt
  • 1/2 cup distilled white vinegar
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch dissolved in 1 teaspoon water

Toss cucumber and onion with 3/4 teaspoon salt in a sieve set over a bowl and drain 3 hours. Discard liquid from bowl. Wrap cucumber and onion in a kitchen towel (not terry cloth) and squeeze out as much liquid as you can. Bring 1/4 teaspoon salt, sugar and vinegar to a boil, stirring until sugar has dissolved. Boil about 3 or 4 minutes to reduce to 1/2 cup. Add cucumber and onion and simmer, stirring, 2 minutes. Stir in cornstarch mixture. Simmer for 1 minute, stirring constantly. Transfer to a bowl and chill, uncovered, about 1-1/2 hours. Keeps in refrigerator for about a month.
