Turkey Burgers & Meatballs

Makes 10 burgers or 50 meatballs

  • 1 package ground chicken and 1 package ground turkey (not breast) – about 2-1/4 pounds
  • 3 eggs, lightly beaten
  • 1 cup breadcrumbs
  • 1 cup grated parmesan cheese
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/2 to 3/4 cup chopped fresh herbs (such as basil, cilantro, flat-leaf parsley)

Combine all ingredients in a bowl with a fork. Form into burgers or meatballs. (I use a small ice cream scoop that holds 2 tablespoons to make nice, round meatballs.)

Grill burgers until 160-165 degrees.

To cook meatballs, preheat oven to 350 degrees. Place meatballs on cookie sheet lined with parchment paper. Bake for 30 minutes, until cooked through and lightly browned. Add to marinara sauce or cool and refrigerate or freeze.
